At BERÖZKA we inspect every batch of our black caviar ourselves. We look for five qualities that distinguish premium caviar.

  1. Large, uniform pearls

    We look for large caviar pearls with as consistent a size as possible.

  2. Loose caviar pearls

    The individual grains separate easily from one another and do not stick together.

  3. No excess liquid

    Our caviar should have a clean, high-quality consistency without excess liquid.

  4. Mild Malossol salting

    The mild salting brings out the natural caviar flavor without covering it.

  5. Fine, pure taste

    A harmonious, pleasant taste without distracting off-notes or unpleasant odors.
