Characteristics and flavor of our black caviar

Our black caviar – also known as Osietra, Ossetra or Oscietra – comes from the Russian sturgeon (Acipenser gueldenstaedtii). The firm, medium-sized grains shimmer in warm amber to dark-brown tones and taste mildly nutty with a delicate butteriness. Prepared the traditional Malossol way, it is only lightly salted (around 3 g of salt per 100 g) and never pasteurized – preserving the pure flavor of the sturgeon roe.

Serving suggestion: Black caviar is best enjoyed on its own with a mother-of-pearl or horn spoon, traditionally also directly from the back of the hand, on paper-thin blinis with a little crème fraîche — or with dry Champagne or ice-cold vodka.

Osietra or Beluga?

Both lightly salted the Malossol way – the difference is in the grain and flavor.
