Characteristics and flavor of our Beluga caviar
Our Beluga caviar comes from the rare Beluga sturgeon (Huso huso). The large, velvety grains of at least 3.2 mm burst gently on the palate, with a creamy, buttery and exceptionally mild flavor. Prepared the traditional Malossol way, it is only lightly salted (around 3.5 g of salt per 100 g) and never pasteurized – preserving its flavor and delicate texture.
Serving suggestion: Beluga caviar is best enjoyed on its own with a mother-of-pearl or horn spoon, traditionally also directly from the back of the hand, on paper-thin blinis with a little crème fraîche — or with dry Champagne or ice-cold vodka.
Osietra or Beluga?
Both lightly salted the Malossol way – the difference is in the grain and flavor.
